It all began the first time I visited Julian on a quiet weekend several years back. I had no idea what awaited me, but I was captivated by the breathtaking scenery — rolling farms and soft hills painted in endless hues of green and brown. Julian was alive with the soothing sounds of birdsong, gentle breezes, and crisp, clean air.

Though it may sound familiar — like a scene from a distant place or a forgotten dream — it awakened something deep inside me. It felt like a vivid memory resurfacing from my childhood days in the Golan Heights. That familiar connection stirred emotions I hadn’t felt in years, bringing back visions of a simple yet joyful life, where my grandmother and local farmers crafted everything by hand with love and care.

Jvalleys was inspired by this heartfelt experience — a journey that crossed continents, preserving those cherished memories. Memories of family and friends gathered around a long outdoor table, sharing homemade dishes prepared with fresh produce from nearby farms. That’s when I realized how much I missed my grandmother’s traditional ghee… and that moment sparked the beginning of this story.
